WHY BUY OUR VANILLA EXTRACT?

Our Vanilla Extract is actually made right here in Vermont. We only make Vanilla Extract in small batches at our facility in Williston using the the best beans from Madagascar and 100 proof triple distilled 10x filtered Vodka for a very clean Vanilla taste. We will note that our Vanilla extract may seem to have a stronger alcohol smell and taste sensation from the bottle. Alcohol is used as the solvent to extract Vanilla flavor from the beans. Vodka has a ratio of water to pure alcohol that makes up the advertised proof. 100 proof equals 50% alcohol, 50% water. So when it has a little more alcohol smell it just means that there is less water in our extract.

WHY IS VANILLA SO UNIQUE?

Vanilla has more than 250 organic components that make up its distinctive flavor and fragrance. It actually has at least 300 components; about 250 have been positively identified.  Scientists have been trying to reproduce vanilla in a laboratory for the past 25 years, they haven’t been able to create the distinctive qualities that make it so very popular.

 ISN’T IMITATION VANILLA JUST AS GOOD?

Imitation vanilla contains only one organic component – vanillin – the flavor and fragrance that we associate with vanilla.  Because pure vanilla contains so many other flavor and fragrance components, it has a much richer smell and taste than vanillin does. Synthetic vanillin just can’t compare with pure Vanilla Extract.

WHAT IS VANILLA?

Vanilla is the only edible fruit of the orchid family, which is the largest family of flowering plants in the world, with over 25,000 species worldwide.

WHY IS VANILLA SO EXPENSIVE?

Vanilla is the most labor-intensive agricultural product in the world! It takes between 18 months and three years from planting a cutting of orchid vine till the plant produces orchids. The orchids bloom and die within a few hours unless they are pollinated by hand. The beans must stay on the vine for nine months before being harvested. The beans then go through a curing, drying, and resting process for several months.

HOW LONG DOES EXTRACT REMAIN GOOD?

Vanilla extract will last several years as long as it’s not exposed to bright light or temperature extremes. There is no expiration date for pure vanilla extract.

HOW DO YOU STORE VANILLA EXTRACT?

Vanilla extracts are packed in amber-colored bottles for a reason. Since light and heat are the biggest enemies of extracts, store them in a cool, dark place.  But not the refrigerator!

WHAT IS SINGLE-FOLD AND DOUBLE-FOLD VANILLA?

Per FDA CFR 169.3 and CFR 169.175 Vanilla Extract must contain the total sapid and odorous principles extractable from 13.35 ounces of vanilla beans per gallon of aqueous alcohol solution in which the content of ethyl alcohol by volume amounts to not less than 35 percent. This would be called Single fold. Double fold simply must contain twice the amount of extractives.

WHAT CAN BE IN VANILLA EXTRACT TO BE LABELED AS SUCH?

Per FDA CFR 169.3 and CFR 169.175 Vanilla Extract must contain the total sapid and odorous principles extractable from 13.35 ounces of vanilla beans per gallon of aqueous alcohol solution in which the content of ethyl alcohol by volume amounts to not less than 35 percent.​ Per CFR 169.175 it may also contain the following optional ingredients and still be labeled Vanilla Extract.

(1) Glycerin.

(2) Propylene glycol.

(3) Sugar (including invert sugar).

(4) Dextrose.

(5) Corn syrup (including dried corn syrup).

WHAT INGREDIENTS DO YOU USE IN YOUR VANILLA EXTRACT?

Our Vanilla Extract only has two ingredients: Vodka(distilled from premium grain, 100 proof), Vanilla bean extractives.
